Good Morning World,
Well, just 2 more days of 2014! Isn’t that amazing? What a year it has been! I’m looking forward to 2015 and all it will bring. Last night I had a wonderful supper with salmon and broccoli and cheddar cheese. I’m beginning to enjoy this “no wheat” thing. Still reading “Wheat Belly”. I’ve learned a LOT by reading that book. I’m almost to the part (at 54%) where it gives me a listing of all I can eat and what to avoid. I’m not doing it perfectly, but I think I’m doing OK. Here is a picture of my newest “Spaghetti” dish – it really is tasty:
I’ve been eating out of these colorful bowls (I have 6 of them) and hardly ever use a real plate. It’s probably because I like to watch TV when I eat and it’s not as messy that way. This dish has spaghetti squash as the base, tomato sauce, hamburger and broccoli. I was amazed how it “satisfied” my craving for “pasta” – it really works for me! I want to thank Bill and Cathy for telling me how to cook spaghetti squash. I’m trying it again tonight. I’m letting the spaghetti squash and burger “thaw” out during the day today in the fridge so I’ll be interested in knowing how the squash turns out after freezing. I love my little George Foreman grill too. I cooked salmon last night on it – it was great too!
So yesterday on FB I saw this beautiful flower on Beverly’s FB page and it reminded me of mine:
Dick and Doug gave me this plant for Christmas. It is an amazing plant in the way it grows up and blooms. It says to keep it out of direct sunlight so I have it in the corner under the gutter by my front door. I think today when I get home it should look like “&After” today. I’ll let you know!
I can’t remember if I’ve put this picture on Wylie yet (since it wasn’t in my library, I hadn’t), I know I sent it around and had it on FB, but here it is for “our” enjoyment again. It’s my Christmas Cactus that bloomed at Christmas – I mean REALLY on Christmas Day!
I had this on the front porch, but Domino took to eating it so it got a little “beat up”. So I decided to take it outside. It’s a sturdy little thing. One of the RCA’s at work gave it to me last Christmas. I should show her this picture when I see her next. Her name is “Yelena” and she comes from Romania or some other country like that. Anyway, she is an “engineer” but when she came to America she couldn’t get work in that field so she became an “RCA” ( Resident Care Assistant). She is one of the “good” ones. I really like her!

Please let me know how the squash worked after being frozen. I’ve never frozen one. Dinner sounds delicious!

The squash was fine. A little more “watery” but the flavor was there and when I mix it with the meat, sauce and broccoli it just mooshes up together. Delicious!

Thanks for letting me know…we had spaghetti squash spaghetti for supper last night. This morning I made squash pancakes seasoned with onions & topped them with eggs over easy with a side of bacon. yummy!

Daughter Kathy cooked Lasagna, each piece contained three servings of vegetables, no meat. Never had I tasted this kind of food, and never had I tasted food quite this GOOD. And so I had in all SIX helpings of vegetables
RR discussed recently, the 3rd Step, surrender. But not in sense of giving UP. He says, more like ACCEPTANCE! In memory of that, I accepted (my) Kathy’s dietary practices as my own for the evening…and it was GOOD! And I got to use that thought this morning. It made sense!
But the BEST was the fire! In a huge kettle (large enough to fit a plump missionary) burned this wonderful-smelling wood fire, and we talked and warmed. I have few photos, gotta see how they came out–it was dark, ya know.
Thought maybe you’d skip writing today, but glad you posted the blog, Mary. It is a triple combo for me of meditation, contemplation, and relaxation before going out and about.
Spent some time looking for–YOU KNOW WHAT–in Office Max this morning–NOTHING called out to say,
“Steve, please come HELP!
I’m stuck here on the shelf!”.

It’s good to know that you are OPEN to new things. That veggie lasagna sounds fabulous! The fire pit sounds like the fire Bill and Cathy and I had out in the Everglades. Bond fires are pretty neat – I love the crackling and the cracks (bantering) back and forth! It’s a great life!
