Hello Everyone,

Well it’s MONDAY after another 4 day weekend – 2 in a row.  I’m enjoying the time off but it could become a habit that I’m not quite ready for.  It will be a busy week finishing up loose ends for the end of the year and end of the month.  I’ll have a lot of “catching up” to do, but Becky will have more since she’s been gone for 2 full weeks – I’ll be glad to have her back!  Let’s see if I can find a picture of my friend Becky from FB:

Becky is our “Activities” director at Orchid Terrace.  She is fantastic at her job – makes life so much more fun in our assisted living environment.  This picture is of her (in the middle) with her boss Celeste to her left and Tessa to her right.  Tessa is our Wellness Coach for Moorings Park.  She recently got married and has 2 daughters (one biological and one “step” daughter).  They seem really happy.  Celeste also has 2 daughters.  Her husband was our Environmental Services director years back and he died of a very quickly moving cancer of some sort.  His name was Guy and he was funny and fun to be around.  It was a trauma for all of us.  We had the service for him at Bower Chapel.  Now Celeste has a new partner.  Her name is Monica and we work together at Orchid Terrace – she is a LPN.  So life is interesting!

Last night I discovered another item that was left over from my previous owner.  It is a vegetable chopper.  It’s been in the pantry in the corner since I’ve moved in:

So I have a couple of sweet potatoes and I was trying to figure out what to do with them.  So I used the “Chopper” on one of them and it chopped them into cute little squares.  I then sauteed them in Olive Oil and added cumin and cinnamon and onion salt to them.  I’d have regularly used fresh onion, but didn’t have any and didn’t want to go out.  I should have some onions on hand I suppose.  Anyway, I reheated my “Chicken Bryan” from Carrabba’s and had a fantastic, wheat free meal.  The sweet potatoes were awesome.  I could probably eat them all by themselves and would be happy and full.  Still have 2 more to work with.  But the “Chopper” was a nice surprise for me.  I think the raw potato was a little “hard” for the thing to chop, but I don’t think I broke it although it took a lot of strength to do it.  But it was good exercise also!

    Enjoying four day off (X 2) is a real treat, and a habit like that might be hard to break. To this day, I have trouble deciding what to do on holidays like Christmas, Thanksgiving, New years Eve etc., b/c holidays were certain “work” days. I think there was “comfort” in work, the camaraderie, “fitting in”, getting paid, heheh

    Beware, some honesty is ahead…Cooking is not my forte, in fact, is not my “anything”. And cooking articles do not say much to me, mainly b/c I’m not listening/reading with care? Hmmm. HOWEVER, while reading (your) this business about dicing the sweet potatoes, and using restaurant-warmed-over for main course, I was thinking, “I could do THAT!” (Right now is FIRST time I hope Anna is not reading this blog–grin!) SO, I’ll forget about (doing THAT!) cooking. One time in the family business I lit a stove (gas) and it sort of blew up in my face. Took a few weeks for hair and whiskers to find their way back through my skin. NOW, anything in a microwave I’ll do but that’s IT.

    Oh…I DO make the best deviled eggs, even boil them on stove. HAH! On year for an AA function I made 8 dozen. My fingers were sore for a month from peeling eggs. Never mind…

    ONE LAST THOUGHT…I might have passed on commenting today, because topic WAS about food, ya know LOL! But then you threw in another photo of my #2 fave cat, Metaxa, in mt favorite pose. Well, a CAT shot just “grabs” me, and so I get to writing and cannot stop (as you know).

    And yes, even going to work, you’ll have to admit, Mary…WWW it IS!

      Sneaking this in at work – shhhhhhhhhhhh- don’t tell the boss. I’ll try to remember that thing about talking about “FOOD”, but it’s my new “healthy passion” right now. Eventually it will go by the wayside as I get used to this new cooking/eating habit – right now it’s fun.

      I have free labor to “paint” my place. I’m going to take advantage of that too. More will be revealed and my place will soon “pop” with a new feel and look – just because of paint! Can’t wait!

        Hey…WAIT a minute! I DO enjoy “reading” about the food stuff, my whole family since 1726 have been bakers, cooks, and innkeepers, so I feel a “connection”. However I just don’t know how to get into the conversation–commenting, OK? (Well, I COULD tell you about the cheeseburgers at McDonald’s–$1 each!!!!!)
